Loaded Baked Tomatoes






Loaded baked tomatoes recipe


shopping list & ingredient list


3 ripe tomatoes
5 medium size potatoes
dash of salt
dash of pepper
1/2 cup whole milk
1/4 cup parmesan cheese
2 slices of bacon
1 tbsp. parsley minced
1 tbsp. butter




Kitchen Setup


Sharp paring knife
tablespoon
teaspoon
medium size sauce pan
skillet
ice cream scooper
pizza cutter (to mince parsley)
cutting board
parchment paper
blender or food processor






Directions and Prep.


wash off potatoes and chop them
bring water  to boil in a medium size sauce pot
let potatoes boil until soft
while potatoes boil cut the tomatoes in half
scoop out flesh from tomatoes
While waiting cook two slices of bacon
When potatoes are finished drain and rinse
Place potatoes into a blender
warm milk until lukewarm
add half the warm milk and butter
blend on medium and slowly add in rest of milk
remove potato puree and place in a medium size mixing bowl
chop bacon
chop parsley
whisk in bacon and cheese into potatoes
whisk in a slight amount of bacon grease


Baking and Cooking instructions


preheat oven to 350 degrees
TAKE a ice cream scoop and overfill the tomatoes with the potato mixture
place the tomatoes on a parchment paper lined baking sheet
bake for 30 to 40 min.
broil for another couple min. until golden brown.


Remove from oven and top with minced parsley.




optional


make a Avocado sauce and drizzle over top of the loaded baked tomato.
