Vegetarian Chili

Vegetarian Chili Recipe

Ingredients used in the recipe


1 tablespoon olive oil
1 chopped organic yellow onion
3 cloves minced garlic
1 can organic diced tomatoes
1 organic carrot chopped in to half moons
1 tablespoon chili powder
1 teaspoon roasted cacao nibs
1 teaspoon cumin
2 cans or 3 cups organic red kidney beans
1 cup water
2 tablespoons tomato paste
1 teaspoon sea salt
1 teaspoon your favorite hot sauce
1 teaspoon cayenne pepper
1 chopped jalapeno pepper
1/2 cup organic sweet corn
1 cup diced zucchini 
2 sliced white button mushrooms
1 sprig oregano minced
2 green onions
1 tablespoon plain yogurt


Recipe Instructions


Heat oil in large frying pan
add onions and garlic saute for 5 minutes
add the rest of the ingredients simmer over high heat until boiling
reduce heat and simmer covered for 20 to 25 minutes

optional 

serve and top with plain yogurt and chopped green onions

NO Bake Kidney beans with cashews

No Bake kidney beans 


Kidney beans with cashews

Easy no bake kidney beans 



Ingredients used in the recipe


1 can organic kidney beans
1 organic avocado
1 organic small red onion
1/4 cup roasted cashews
1 pastured egg

Recipe Instructions



hard boil one egg 
chop and dice avocado
rinse kidney beans
chop cashews 
chop onion 
let egg cool for a minute or so remove shell and chop egg
take all ingredients and stir together in a medium size mixing bowl

serve and enjoy

Cook time 10 to 15 mm
Number of servings 3 to 4
Total Time:15 to 23 mm
