Eggs over spinach
















in a cast iron skillet --- coat the skillet with olive oil, place a large handful of baby spinach in the skillet -- crack 2 eggs over the spinach -- add a pinch of pink salt-- sprinkle some black pepper --- place lid on -- heat over medium heat-- takes about 10 min,,, to poach the eggs-- Remove --- top with shredded feta cheese and your fav. hot sauce -- garnish with a fresh sliced tomato -- my lunch

Optional-- Sprinkle hulled hemp seeds over top.
