Homemade Tomato Salad Dressing
I had a super ripe heirloom tomato that had to be used--- I made good use of this by making a
quick and easy tomato salad dressing -- the foundation of this recipe I found as I was reading through the World's healthiest foods book, they called for soy sauce.I used amino acids instead.
1 1/2 cups heirloom tomato chunks the riper the better
1/2 ripe organic avocado
2 to 3 sprigs of fresh organic oregano ( from my kitchen herb planter)
3 tbs of extra virgin olive oil
1 tsp of braggs apple cider vinegar
2 cloves of garlic
1 inch piece of ginger peeled
1 1/4 tsp of braggs liquid aminos
sea salt and pepper to taste
blend all in a blender for a few minutes
serve over your favorite salad or pasta dish
note:
why do I MAKE My own dressings and condiments -- cuz the stuff in the stores is highly processed and full of a bunch of something -- look at the labels
why should you make salad dressing --- it is better tasting, cheaper and fresh and not full of chemicals -- it is real food---
Chili Bean Pasta n Cheese recipe
Chili Bean Pasta n Cheese Ingredients 1 can organic Kidney Beans 1 cup orzo pasta 1 large organic mushroom sliced and diced 1 large organic Heirloom tomato Diced 1 organic green bell pepper diced 1 medium organic red onion diced 1/2 cup cheddar cheese 1 tbs organic cilantro 2 tbs extra virgin olive oil 2 cloves organic garlic pressed sea salt pepper 1 tbs minced fresh organic oregano Directions Cook the Orzo pasta in a few quarts of boiling water for about 8 minutes saute the onion and pepper add the rest of the ingredients while the pasta is cooking reserve the cheese and cilantro once the pasta is complete drain and rinse add the pasta into the saute pan with the rest of the ingredients simmer over medium high heat for 4 to 5 min. stir in cheese optional stir in 1 cup of cooked and seasoned taco meat -- click here for recipe for a little heat add in one diced jalapeno pepper plate and top with cilantro and a tsp of cheese |

10 minute--Sauteed White Cabbage with apples
my cabbage dish that I made
Cabbage, Apples, Summer Sausage .... and some special ingredients to make the taste buds say hello./

1 small head of white cabbage about 4 cups slice it thin 1/4 inch
1/2 granny smith apple cored and sliced in 1/2 inch slices leave the skin on
1 tsp lemon juice sprinkle onto sliced cabbage before cooking
1 tbs apple cider vinegar
2 tbs of raw honey
3 tbs of virgin olive oil
sea salt to taste
5 tbs veggie broth heat in a skillet over medium heat, when broth begins to steam
, add cabbage and apples top with vinegar, and honey.
Mix, cover and cook for 5 minutes
Dress with olive oil and sea salt
cut the cabbage into small pieces
serves 4

Egg Omelet Muffins
INGREDIENTS
▪ 6 eggs
▪ 1/2 cup cooked summer sausage, cut into small
pieces
▪ 1/8 cup each diced tomato,mushroom, red bell pepper,red onion,avocado

▪ 1/8 cup homemade mayonnaise --- how to

▪ Optional Ingredient Idea: 1/4 cup shredded cheese
Directions
Preheat oven to 350°F. for easier removal line with paper baking cups. . In a bowl, beat the eggs. Add other ingredients and stir to combine.
Spoon into the muffin cups. Bake for 18–20 minutes until a knife inserted into the center of an muffin comes out almost clean. . Remove the omelets from the muffin cups and serve, or store for another day.

10 minute Banana Ice Cream

Ingredients
2 frozen bananas
1 inch Madagascar vanilla bean
1/2 tsp nutmeg
1 tsp roasted cacao nibs
1/2 tsp ground Cinnamon
1/2 tsp coconut sugar
1/2 tsp coconut sugar
Directions
Place
banana, nutmeg, vanilla bean and coconut sugar in a food processor and puree until you achieve ice-cream
consistency. That’s it!
Serve
immediately.
Toppings = Serve and Place the cacao nibs and cinnamon over the top of the ice cream.

Homemade Taco Seasoning mild
I have came up with a very unique blend of spices to give your
homemade taco seasoning a mild yet satisfying flavor.
Ingredients
1 tbsp of dark chili powder
1/2 tsp cinnamon
1/2 tsp cayenne pepper
1 tsp coconut sugar
1/2 tsp onion powder
1/2 tsp cumin seed ground
1/2 tsp paprika
1/2 tsp crushed red pepper
1/2 tsp ground black pepper
1 tsp sea salt ground
1/2 tsp ground ginger
1/2 tsp turmeric root ground
Directions
mix all ingredients in a small bowl mix together well
In a large skillet cook 1 to 1 1/2 lbs turkey, chicken or beef until well done
drain fat from meat
return meat to skillet
add 1 cup of water and the taco seasoning
heat over medium heat until the water is dissipated
stir in 1 tbsp hot sauce
remove from heat stir in 1 tbsp of honey

Ingredients
1 lb grass fed beef
1 green bell pepper chopped
1 cup shredded Cheddar cheese
1 small red or white onion chopped
1/2 avocado sliced
1/2 cup chopped cilantro
1/2 cup chopped spinach
1 minced garlic clove
1 sliced mushroom
1/2 cup diced fresh tomato
2 tablespoons mayo How to make your own
1 lime juiced
1 tablespoon raw honey
taco seasoning -- How to make your own
1 cup water
1 tablespoon hot sauce

In a large skillet cook your beef until well done
drain fat from meat
return meat to skillet
add the water and the taco seasoning
heat over medium heat until the water is dissipated
stir in hot sauce
remove from heat stir in the honey
heat three crispy corn tacos at 350 degrees for 5 to 7 minutes
remove from oven fill with beef
top off with a little mayo
top off with a even mix of veggies and cheese
spritz fresh lime juice over the tacos
for extra heat--- add sliced jalapeno peppers and drizzle some hot sauce over top of taco

Instead of using taco shells--- just add all the ingredients into a bowl with 1 1/2 cups of
seasoned meat mixture--mix together well and eat like a salad.

Creamy Pineapple Smoothie
The Creamy pineapple smoothie. A treat to start the day with.
The Recipe
1 cup Pineapple juice
1/2 ripe avocado
1 orange peeled
1/2 inch ginger root
1 tablespoon milled flax seed

1 tablespoon chia seeds
1 roma tomato
1 tablespoon raw honey

Apple Pie smoothie
Ingredients
1 frozen banana
1 peeled, chopped apple
1 cup almond milk or scoop of Vanilla Almondilla VEGA
shake w/ water
½ tsp. cinnamon
Pinch of nutmeg
Ice (optional)
Mix all ingredients in blender for 1-2 minutes and serve. Note: You can add other ingredients for
added nutrition such as flax or Chia seeds.

Looking for something quick and simple. I have something for you here. I came up with this recipe because I needed something to eat but I did not feel like cooking too much.
The Recipe
1 can organic navy beans
1 can diced tomatoes
1 clove garlic pressed
1 small red onion chopped
4 slices bacon cooked
1 tablespoon raw unfiltered honey
1 teaspoon coconut sugar
1 teaspoon hulled hemp seeds
1 jalapeno pepper sliced thin
spice mix
1/8 teaspoon of each
onion powder
basil
turmeric
paprika
cinnamon
mix all spices together well.
Rinse the navy beans and tomatoes place them in a large mixing bowl stir together
add in the spices stir well
add in the rest of the ingredients reserve the honey and hemp seeds
stir together with a wooden spoon until mixed together well
add in the honey and stir into the mixture.
plate and sprinkle with the hemp seeds

Shaved Ice Recipe
On those 100 degree summer days we all need and enjoy something cold as ice to refresh ourselves with. I made some homemade shaved ice. It is dye free and has no added sugars. Four ingredients and you are done.
What you will need
2 Tablespoons of blueberries
juice of one lemon
1 tablespoon of maple syrup
1 1/2 cups cubed ice
First make your liquid
place the berries, lemon juice and maple syrup in a blender, blend until it
is like a juice.
Second
Place the ice in a blender like a magic bullet
run the blender until the ice is pulverized
Third
Put ice in a cup or bowl
pour the liquid blueberries over top
enjoy

Green Juice

I felt like juicing today. This is my most recent recipe for green juice.
3 to 4 stalks celery
1 Large cucumber
1 small fennel bulb, chopped
1 cup chopped green cabbage
2 cups chopped fresh pineapple
3 to 4 black kale leaves
1 small orange
1 granny smith apple
Place all ingredients through your juicer
Pour into a fresh glass and enjoy

Carrot Salad with Healthy Vinaigrette Dressing

I am testing out my new Eco lunch box. Today I made a shredded carrot raisin salad with a homemade vinaigrette dressing. To go with this as a break time snack I made coconut on a log .
Below is what will be all placed into the Eco lunch box.
The Salad
shred 3 to 4 medium size organic carrots
1 1/2 cups chopped fresh pineapple
1 1/2 cups raisin's
Place pineapple into lunch box or an a plate
cover with carrots and raisin's
Healthy Vinaigrette Salad Dressing 3 tbs Virgin Olive oil --I use Bragg's Juice of one lemon 1/2 tablespoon of grated ginger mix all ingredients together well -- |
Coconut on A log 2 Stalks celery cut into 3 inch lengths fill celery with almond butter top off with unsweetened shredded coconut |

I needed a cold and refreshing drink after a long dog day of summer in Texas.
I came up with this refresher of a smoothie.
Smoothie Recipe
1/2 large peeled cucumber
1 peeled kiwi
1 peeled orange
1 teaspoon hemp protein powder
1 cup ice
Juice of 1 lime
Juice of 1 lime
1/3 cup pure pineapple juice
1 cup baby spinach
Optional; 1 tablespoon of chia seeds
blend all until smooth and consistent
can';'t get refreshed any faster than gulping down a cucumber smoothie after a 100 degree day

Meatless Monday Taco's
Today is meatless Monday. I decided to
participate in my first meatless Monday by making some Pinto bean tacos. Simply put
I substituted beans in place of beef or chicken.
What you will need
1 1/2 cups organic pinto beans
3 hard organic corn taco shells
1 large tomato
1 medium red onion
1 avocado
a bunch of cilantro
1 jalapeno pepper
1 cup chopped spinach
1 lime
salt
pepper
hot sauce
cumin
feta cheese
mozzerella cheese
plain greek yogurt
Preheat the oven to 350 degrees
place the pinto beans in a small pot on medium heat on the stovetop
let simmer for about 15 minutes or until soft remove from heat and drain
make a small batch of garden green salsa click here for directions
reserve some of the salsa ingredeints
shred a 1/2 cup of each kind of cheese
place the taco shells in the oven for about 5 to 6 minutes
remove the Taco shells let cool for a minute or two
load the taco shells beans first
place the spinach and then your fresh chopped reserved salsa ingredients
add the salsa
top with a tablespoon of yogurt
top off with a mix of each cheese
enjoy :)

Coconut Walnut Balls
This is what I am GOING TO call a energy candy ball....... cuz that is what it is. |
I was in search of a easy to make no bake snack that would give me energy . I choose this Coconut Walnut ball recipe -- I found this recipe in the worlds healthiest foods book. I give this 5 stars mainly because it is easy to make. I also love the taste. These are like eating a lemon lime candy-- no baking and non dairy as well.
The Scoop
Ingredients
2 cups walnuts
1 cup soft dates, pitted
1 TBS grated lemon rind
3 TBS fresh lemon juice
1/8 teaspoon sea salt
1/3 cup fine grated coconut for coating
Directions
Coarsely chop the walnuts in a food processor
add in the other ingredients reserve the coconut
blend until well combined , stop when the mixture starts to stick together, but before it
turns into a big ball.
scoop out a tablespoon at a time
roll into a ball
place coconut onto a platter
coat walnut balls by rolling in the coconut until well coated
place the balls onto a baking sheet let sit in refrigerator for an hour to allow to set up .
Store in a airtight container for up to 30 days
enjoy this sweet snack
this mixture will make anywhere from 15 to 30 balls depending on the size of the ball.
Blueberry-Banana Chia Muffins
My very first Muffin cooking adventure. I think it is a winner of a recipe. I found this recipe in the Whole life Clean Eating Cookbook. The first words from my mouth after taking a bite of the finished product were omg and wow.... so good.
What's in it?
Dry Ingredients:
1 teaspoon cinnamon
¼ teaspoon nutmeg
1 teaspoon baking soda
½ teaspoon sea salt
Wet Ingredients:
2 cups ripe mashed bananas 4 to 5
2 tablespoons whole chia seeds
½ cup melted coconut oil
¼ cup coconut sugar
1 tablespoon raw apple cider vinegar
Other Ingredients:
½ cup fresh or frozen wild blueberries
optional --- sprinkle rolled oats and shredded coconut over top before baking
Sprinkle a pinch of coconut sugar to top off.
Directions
Place all the dry ingredients in a medium mixing bowl, whisk together well.
Place all the wet ingredients in a large mixing bowl. Mash the bananas and mix well. Let the mix set for a few minutes to allow the chia seeds to soak in some of the moisture.
Add the dry ingredients and mix vigorously with a wooden spoon, fold in the blueberries.
Use a 12 muffin standard size baking pan, grease the pan lightly with coconut oil, line with papers fill each muffin cup about 3/4 way with the batter right away.
Place pan into a preheated oven at 350 degrees for 25 minutes
For the best nutritional value use organic Brown Rice Flour.
Cool on A wire rack

Strawberry Chia Power nut Smoothie
Today I was looking for something with protein, sweetness and of lasting energy. I feel this smoothie has all that and a little more. The directions and recipe are below enjoy.
¾ cup raw cashew nuts
2 tablespoons hulled hemp seeds
2 tablespoons chia seeds
½ to 1 teaspoon raw vanilla powder
2 cups water
1 1/2 cups frozen strawberries
1/2 cup frozen blueberries
blend all until smooth serve and enjoy

Pear breakfast smoothie--- by man (eric) in the kitchen
The big bad breakfast pear smoothie was paired with my green breakfast today. I started the day off with a blast of energy.
1 Organic Pear Peeled and cored
1 lemon juiced
1 Organic Apricot ( Remove the pit)
1 cup green juice (see that here)
1/2 cup ice
1/2 cup water
Blend all together until smooth
Serve with the Green Breakfast (see that here)

What? Veggies for a green breakfast...you must think that I have fallen and hit my head. Here in the United States we all have been kind of taught to believe that breakfast is all about bacon and eggs. Today I have asked the chicken and the pig to step to the side. Below is the directions to make up this Green Breakfast in less than 15 minutes.
1 1/2 cups chopped broccoli -I used frozen
1 small carrot chopped into small rounds
Dressing
3 teaspoons virgin olive oil
1 lemon juiced
a pinch of sea salt
a pinch of pepper
1/2 teaspoon of Dijon mustard
Steam the veggies for 5 to 8 minutes
In a blender blend all the dressing ingredients
pour over the steamed veggies
hand grate some feta cheese over top of the steamed veggies.
That's it a healthy green breakfast in about 15 min.
